Great Canning Tip

Ever since Google Reader passed away, I've kind of struggled to stay up-to-date on the blogs I usually read.  I know... I did export my blog list to another reader, but it's just not the same.

Anyways, I was catching up on 'Food In Jars', one of my favorite blogs, and she posted a canning tip and I immediately couldn't believe I hadn't thought of it before.

When water bath canning something I fill my huge pressure canner and wait FOREVER for it to come to a boil because it's the only pot I have a rack for.  I've thought about trying out a smaller pot, especially for smaller batches of canned goods, but was never quite willing to chance it.  Who knows what disaster could strike as a result?  Broken jars?  Incorrectly processed food that then (gasp) KILLS SOMEBODY because of my INCOMPETENCE?  AAIEEE!

Ok, probably not that last one, but who's willing to risk it?  Well!  The article mentioned that as a rack you could use a silicone trivet (and I happen to have one), a hand towel, and even - this is so brilliant - jar rings!

HA!  YES!  I'm totally willing to admit that I got way too excited about reading this.  :-)
