Super-Easy Weekday Morning Pancakes

Ok, so I know pancakes aren't exactly the hardest thing in the world to make, but breaking out all the measuring cups to whip up a batch just for myself on a weekday morning never seems worth it.  Plus, while pancakes are all super delicious they're also full of nutritionally-empty carbs, which make them a hassle AND a guilty indulgence.

I have tried 'paleo' pancakes before where you mix a banana and an egg together and fry that instead of the normal flour batter, but it just shreds into ribbons in the pan which turns them into a disappointing hassle - not much of an improvement in my book.

WELL.  I have FOUND the SOLUTION.

(Or, you know, located where somebody else figured out the solution.  Whatever.)

Detoxinista.com posted a recipe for Paleo Pancakes that you BAKE.  That's right - you completely sidestep the annoying hassle of pan frying each individual pancake!  HA!

Paleo Pancakes

makes 4 pancakes (about 1 serving)

Ingredients:
1 large banana
1 whole egg
1/8 teaspoon baking soda
1 tablespoon peanut butter

Directions:

Preheat your oven to 400F.

You could mash up all the ingredients in a bowl, but in the quest to make this as fast and painless as possible to prepare I just chuck all the ingredients into my blender.  I then pour the batter directly from the blender carafe onto a baking sheet lined with parchment paper into 4 evenly sized puddles.

Bake for 10-12 minutes at 400F, or until golden brown.

I'll usually flavor the pancake batter with whatever I feel like that morning - my usual combination is a teaspoon of vanilla extract and a shake of cinnamon.
