So last night we had nachos for dinner and broke open the first jar of our homemade pickled jalapeños. Normally we don't find store-bought pickled jalapeños spicy at all, but we DID find the homemade ones a bit spicy. It was a pleasant level of spicy, and together we still ate about 1/4 of the pint jar on our nachos.
Something my husband, Jack, mentioned was he found the homemade jalapeños to not be as crunchy as the store-bought kind. Next time I might try cutting them into thicker rings and see if that helps with the texture. I don't know that I ever think of store-bought jalapeños as 'crunchy' so it didn't bother me.
Also these have just had the minimum 1-week pickling time, so they might continue to change and develop as time goes by. It'll be interesting to see what happens. Maybe less heat but more of a vinegar flavor...? We'll see!
